Kale is renowned for its performance as a winter green. This large-leafed vegetable has been a reliable hunger gap food for centuries, and is highly nutritious. The leaves come in red, green, and blue colors, and in straight- or curly-leafed varieties. The 2010 Seed Savers Exchange directory lists thirty-eight available varieties.
